This recipe can be lightened up by cutting the olive oil to 2 tablespoons and adding 1 tablespoon more of both red wine vinegar and lemon juice as a replacement. The capers may be eliminated or replaced with diced red bell peppers to cut down on the sodium.

Jicama Slaw

Jicama reminds me of green apple in flavor and resembles a rutabaga, another root vegetable, the family from which this unusual vege-fruit derives! I enjoy trying to find uses for it, which can be quite a challenge. For instance, you must always cut jicama very thin, otherwise, it can be tough to eat or cook. With care and proper use, jicama provides a unique texture and flavor that is unmatched by other vegetables and fruits.
